Can't Update User Assigned to Assignements

I'm getting the below error when trying to update the user id assigned to an assignment:

Field Not Supported On Item Type","detail":"The field of [Customer] does not support being set on items of type [assignments]

Note that I understand that I can't update an assignment that has time already logged. In this case, there's no logged time for the task so that is not the issue.
